My Vacation

A few weeks ago, I took a much-needed vacation. This means, other than the three articles I publish on my site every week, I didn’t write a word anywhere. I can safely say I enjoyed every moment, and I would love if I could do it all over again.

Instead of packing my bags and leaving this pleasant town I call home, my wife and I decided to stay local and host my mother-in-law for two weeks. Wow! What a great time that was. I don’t care what anyone says about mother-in-laws, mine is as cool as they come.

She’s eighty years old. When I suggested we all go watch Jurassic World in 3D, she jumped at the idea. She hadn’t seen a 3D movie since the Fifties where red and blue lenses made up the 3D glasses.

Her verdict? She loved the effects and the heart-pounding action sequences.

Okay, let me repeat what I said earlier—eighty years old, folks.

She also didn’t show any fear when I asked if she’d like to eat hot sauce on her food. She went all out and enjoyed it. In fact, you know what she said to me? She said, “I don’t know if it’s because I’m used to it, but the sauce is weak.” The hot sauce is the suicide chicken wing sauce I use to drown my meats in while I cook.

Apart from my mom-in-law visiting, I had a lot of time to spend with the family and hanging with friends. My kids had their yearend recitals at the performing arts studio they attended during the 2014-2015 season. Both came home with awards. My older one brought back the Most Improved Speech Arts & Drama Performer and my younger one took home the Most Outstanding Overall Performer playing Matthew Cuthbert in Anne of Green Gables. I kid you not folks, the audience was in tears for his portrayal of the beloved patriarch.

The other part of my vacation involved food—lots of it. We went to our favorite sushi restaurant gorging on all the succulent all-you-can-eat dishes we could consume. The joy of this restaurant is having the ability to eat what we want and sharing the dishes among each other. It’s great. My mom-in-law didn’t wince once. She had salmon sushi even after saying the thought of eating raw fish didn’t appeal to her. She’s courageous, I’ll give her that.

The other place we went to was our favorite Greek restaurant. I don’t think I packed in so much food in one sitting. I had a lamb dish that simply rocked my taste buds. If I die, can I request this to be the first dish I eat in heaven?

Lastly, I took time simply being in a quiet place to exist. I allowed the silence to fill my soul with peace, and I took the opportunity to soak in the calm. Incredible what happens when I do that. All of a sudden, life’s trials don’t appear so big anymore. They still are there but they in turn become little troubles I could work through to a resolution.

Anyway, that was my vacation. I’m hoping to do it all again soon, but first I have to get my next release out the door.

Our Anniversary Weekend

The cool thing about being married for over twenty years is that we finish each other’s sentences.

The other cool thing about being married for over twenty years is that we can go on an anniversary weekend getaway without worrying about the kids.

In fact, just recently, that’s exactly what we did. For a number of years now, we’ve packed our bags, loaded the car and headed to wherever the wind would take us. This year we ended up going north into cottage country where the moose are aplenty and the wilderness is our friend. We booked a hotel in Barrie, Ontario and took each day as a blessing without worrying about what came next.

My wife took the liberty to grab the honeymoon suite with a gorgeous Jacuzzi in the middle of the room. I must say, she knows me so well. I should have been a water baby.

The first thing we did when arriving on the Friday night was to unpack, jump on the bed, then relax a bit before heading to our favorite sushi restaurant. It’s a tradition of ours to find a sushi restaurant and stick with it for life. We have a modest dive in our town that only seats twenty. The food is incredible, and we wouldn’t give it up for the world. Similarly, in the town where we were staying, we found a sushi place a few years ago that we always go to regardless of the drive.

I would say the best part of the trip is the unwinding part. Whatever we had brought on the trip, we left in the sushi restaurant when talking about the day. A funny thing happens when we do that. It feels like a cloud lifts and we officially hit vacation mode. In between the Salmon Maki and the Chicken Fried Rice, our life suddenly become less complicated after knowing we have a few days of relaxation to do whatever we want.

From there, we headed to the theater to watch Tomorrowland. My wife enjoyed it. I, however, was so tired by the week that I fell asleep about halfway through the thing. Interesting tidbit of the evening: A couple of teenagers were sitting next to me doing nothing more than kissing up a storm. I was surprised to find by the end of the night their seats hadn’t caught fire with me going up in flames next to them.

On the Saturday, we spent the entire day in the hotel room. Yes, some of you might be thinking what a waste, but if you knew the hectic schedule my wife and I have during the week, you would take a month in deep cryogenic stasis to regain your energy. Besides, it had a Jacuzzi in the middle of the room—I mention that, didn’t I? I don’t think I need to say anything else.

That evening, we headed over to Boston Pizza then took in Avengers: Age of Ultron. This time, I did not fall asleep. What a great movie.

The next day, we checked out early. My wife suggested we try out the marina about ten minutes away. Wow, if there ever was an idea so awesome, this was it. We stayed there a few hours taking a walk on the boardwalk, talking about our future. We dreamed of having a boat someday. Actually, it was I dreaming about the boat and it was her saying, “You’ll have to take care of it. You know that, right?” My feet came back to earth and we continued hand-in-hand talking about other dreams.

We wound the day by heading home, sweet, home where we took the kids out to eat in the evening while talking about our weekend getaway.

In the midst of it all, my wife and I eventually concluded as much as we love our getaways, there’s nothing quite like family.

Appliances

This is one of those nonsense Freedom Friday posts I’m writing without forethought as to where it will go. It’s about appliances. Specifically, it’s about my family’s usage of our appliances and the lessons I’ve learned. Take a chair, this might prove either beneficial or a real snorer.

First thing’s first, I’m not going to name any brand names in this piece because a) I don’t want any trouble from appliance manufacturers hunting me down or my firstborn in an effort to convince me to retract my statements, and b) I don’t want to make it seem as if I’m promoting a product because I think it’s the next best thing to lemon and avocado.

Having said that, I’ll ask the question that’s been on my mind for a while. Has anyone had as much luck with appliances as my family and I have? And when I’m asking this, mind you, I’m asking it with my tongue firmly planted in my cheek.

In the past ten years, my family has burned through three dishwashers, three food processors, two microwaves, a stove, a fridge, a water heater, a gas furnace, a couple of TVs and blenders, and a car—but that’s not really an appliance. I added it in anyway for completeness. The stove and fridge were lonely without a ride.

Let’s start with the dishwashers, since I figure it’s the one thing on the list that keeps us busy washing dishes after it says it’d completed its cycle. I’ll totally skip dishwasher #1 and simply go for the jugular—dishwasher #2. After a year, or you can read it as saying after the warranty ran out, it began making all sorts of churning noises. The noises were awful. They sounded like the machine had eaten a plate and swallowed it whole. By the end of its cycle, the dishes were clean and we thought nothing of it until a day later when my wife loaded the thing and pressed the Normal button. She waited. And waited. And waited. And waited. “Jaaack!” Came the call. I knew the tone. Something needed fixing. Well, the Normal setting didn’t work anymore. My solution? Press the Light button. That lasted for a year until I replaced the machine with one of those fancy-shmancy quiet models. Dishwasher #3. It was good for a while and it, too, then made that grinding noise. This time, I took the thing apart and found the machine had an actual grinder to grind food. Go figure. It broke. Well, if all it did was grind food, I didn’t think it important enough to buy a new model. I just removed the grinder. End of noise. But lately it’s been acting up, not wanting to wash dishes to washing them and leaving gunk on them. Gunk is my definition of crap that sticks to the plate and doesn’t let go. I’ll stop there.

Our food processors haven’t fared any better. One of them had a cup assembly we used to make smoothies. The teeth under the lid of the mixer had worn down and we now have a cabinet filled with useless plastic cups no one uses because the motor can’t latch on to the lid. Food processor #2’s motor burned out. Something about a leaky smoothy that short-circuited the electronics inside the motor’s casing—or something like that. Suffice it to say it’s DOA.

Then we had the water heater debacle that took place a few years ago. It was old, the water was sometimes brown and it took at least five minutes before any one of us could run a bath. Switching it for a new one was a grand process in and of itself. We replaced it, but it was the wrong model. They came back a week later and switched it with a newer one. Guess what. Yep, the wrong one again. Third time out, the heating company got it right. One thing though; a month later, the company not only billed us for the new unit, but they were so kind as to continue billing us for the old one as well. It took a few months of calls and haggling to get it right.

Our fridge is now leaking.

Our Meals

The other night my wife surprised me with a barbecue chicken meal. I say surprised because it was the first time she’d made it. It was delicious. No surprise there since she cooks pretty amazing things for me and the family. During the weekend, I return the favor by cooking the Saturday meal. My kids like it as does my wife.

Freedom Friday is not the same if I don’t talk about food in some form or another. Today makes no exception.

Some of my favorite meals my wife makes are the simple ones with lots of flavor. For instance, during those cold winter nights when the heat cuts in every two minutes and the snow piles high outside our front door, she’ll dedicate a good portion of her time making all sorts of soup. Squash soup, heavy on the hot pepper, is a regular treat for dinner. It lights up the palate and soothes the chills from the bitter wind blowing from the Arctic. Broccoli soup is another one of her specialties. I don’t know what she puts in it to get it so creamy, but I have to say it’s so good.

Although not a meal, my wife has taken to making batches of Greek Tzatziki sauce. It’s a yogurt-based sauce with bits of cucumber and lots of garlic in the mix. We use it to dip fries, chicken and pita bread in it. I can only describe the flavor as divine. The creamy richness of the sauce provides the meal a missing element of flavor that few sauces can compare. Simply outstanding.

My wife also cooks the traditional Italian dishes for our family. Pasta sauce and meatballs is a staple in our diet. Our typical Tuesday night meal consists of lots of pasta—penne, rigatoni, spaghetti, etc.—drenched with her homemade sauce and lots of spicy meat as part of the plate. She’ll add salad and vegetables as side dishes, but her salads are meals in themselves. Standard ingredients in her salads are sliced cucumbers, chunks of feta cheese and at times, Greek olives. I suppose you might call it a Greek salad with a little something to boot.

My Saturday meals can be anything. I’ve been on a curry kick lately, making everything from curry chicken to any meat with curry in there. I have a handful of ingredients I use on a regular basis to bring out the flavor of the meat in a wild and exciting way (coconut milk, curry, garlic, onion, salt, black and cayenne pepper).

I’ll sometimes make lamb as a special treat on a long weekend. I love my garlic, so I’ll mince garlic in the lamb, add olive oil, salt, pepper and Dijon mustard to give it an extra kick. I don’t want to brag—oh, why not—it’s one of the best dishes I enjoy making and eating with the family.

Lastly, the best part about our meals is sitting together as a family and talking about our day. Nothing quite beats that.

Guacamole

Everyone likes new recipes. I mean, I love new recipes and I don’t cook that often. I cook once a week, typically on a Saturday, and I change things up by trying new ingredients in my recipes. But with guacamole—why am I thinking Whac-A-Mole?—there are a few things I do to spin the recipe on its head.

Football season is here and it’s all about guacamole today. If you enjoy food, this Freedom Friday post is just for you.

I learned how to make guacamole from watching master chefs on Food Network Canada a number of years ago when all I watched was Food Network. The thing that attracts me to this Aztec cuisine dip is its versatility in its use.

For instance, I use it for a Saturday night dip with broccoli. If you don’t like broccoli, you can use almost any vegetable and it’ll still make the snack extra special to munch. Just don’t try dipping something crazy like kale with it. Although, I haven’t really tried it, in which case it may actually be somewhat good. Have you ever tried kale chips? Oh, you have to—it’s to die for! I digress.

Let’s get to the recipe, as I know you’re probably wondering what it is.

Ingredients (Serves 2):

  • 7-8 cherry tomatoes
  • 2 avocado
  • ½ lemon
  • 1 garlic clove
  • 4 slices of onion
  • Cilantro (to taste)
  • Salt (to taste)
  • Jalapeño (to taste)

Directions:

  • You can make this recipe two ways. The first way is to use a mixer and make it smooth. The second way is to use a fork, a deep bowl, and mix it by hand. If you go the mixer route, you can make the guacamole very smooth and creamy. It will go well as a dip. If you like chunky, I would suggest the second way—the one I prefer, as you’ll get a nice texture from the mix, but also a wonderful blend that you can taste the ingredients individually.
  • Prep work is easy. Cut the cherry tomatoes into halves in order to have them blend properly in the mix. Add them to your mixing bowl.
  • Scoop the meat of the avocado; they’ll break down easier in the mixer, and by hand mixing. Into the bowl it goes. (Note: Make sure the avocados are ripe, otherwise you’ll end up with double the mixing time.)
  • Squeeze the juice of half a lemon.
  • Chop a medium garlic clove in fine, small pieces. Very small is what you’re going for—the smaller the better. Did I say small?
  • This is where it gets tricky, as I don’t really measure from this point forward. I rather eye it. Depending on the strength of the onion, I go for four slices but if you don’t like so many onion slices, go for less. Two will work as well.
  • Cilantro is one of my all-time favorite herbs. It goes well with salads, dips and as garnish for fresh vegetable recipes. It is so good. Just grab a couple of sprigs, wash and pat dry, and chop finely to add in the bowl.
  • Salt is up to you. Go light at first, believe me, guacamole doesn’t need too much of a kick to taste great.
  • Lastly, add your jalapeño. Cut a couple of small chunks, again, chopping finely, and add to the bowl.
  • Once all the ingredients are in, mix to your choice consistency. As I’d mentioned, I like mine chunky, but you may prefer smooth. It’s totally up to you.

This recipe takes me about 10-15 minutes max to make. It’s easy, tasty and ready to serve. Try it with broccoli, as it makes for a lovely snack.

In a middle-class suburb in Long Island lives Ray Barone (Ray Romano), sportswriter, with his beautiful wife Debra, and their three wonderful children. Across the street, live his parents.

Women Who Wow Wednesday once featured Everybody Loves Raymond‘s Debra Barone (Patricia Heaton) as the assertive, do-it-all homemaker who doesn’t take lip from anyone, including kids’ activity coordinators who’ve set themselves on a pedestal waiting for her to knock them off. Strong-willed, independent, Debra wears the loving mom moniker well. She also does it all.

Ray’s mom, Marie Barone (Doris Roberts), has the best job in the family. She spoils her kids rotten, except Ray’s brother Robert (Brad Garrett), but that’s another story. Perpetually caring for Frank (Peter Boyle), her husband of forty-five years, she’s learned a couple of things along the way. For instance, toenails don’t magically crawl into the garbage, nor does dirty underwear jump into the hamper all by itself.

A typical day in the life of the Barones goes something like this:

Marie Barone: Frank! What are you doing? You can’t eat it from there! Your fork was in there! Now nobody can eat it!
Frank Barone: That’s all I have to do? In that case, the fork’s been in the ice cream, too!
Ray Barone: [comes in] Hey.
Marie Barone: Hi, Raymond. Are you hungry? Do you want something to eat? Only you can’t have lasagna… Or ice cream.
Frank Barone: [sticks his fork in cake] Or chocolate cake.
Marie Barone: Look at him! He’s like an animal, marking his territory!
[Frank sticks Marie with the fork]
Marie Barone: Hey!
Frank Barone: What? That’s a compliment.

Her “Are you hungry?” line defines Marie as the selfless mom who is always willing to go out of her way to make life comfortable for Ray. Her relationship with Debra is a different matter. To Marie, Debra’s never been good enough for her son. In that respect, she has said less than flattering things about Debra’s cooking “Did another dinner get away from you, dear?” However, make no mistake; Marie loves Debra like her own daughter:

Debra Barone: Me too?
Marie Barone: Of course, dear. You’re family.

What makes Marie is not her intrusive, critical, overbearing attitude, although some may find that off-putting, but it is her unapologetic nature when defending her family. This is what makes her a formidable opponent, should anyone dare attack The Barones:

“I wanna tell ya something, there is nothing wrong with this family. We’re very close, we’re very open, we’re very loving, ‘cause I make sure of it.” ~Marie Barone

And it’s true. She may seem like someone you may not want to be with for long periods, but she certainly knows how to show her love. “Are you hungry, dear?”

My Snacks

I love food. I mean, I really love food. By my appearance, you wouldn’t guess it. I stand a lean human whose weight wafts along that of disappearance. Yeah, I’m that thin. But regardless, I really enjoy eating food. That’s why for Freedom Friday I thought I’d give you a rundown of what I love to snack on, not so much to inform you what I think everyone else should be eating, but more to let you know how wonderful an experience it is to find a food worth eating.

Let’s start with the basics. I’m not a processed food kind of guy. I like eating chips now and again, but they don’t provide me with the comfort I crave to keep me going throughout the day. You’ll find, as you peruse the list, my thing is natural snacks. I’ve tried the chips and ice cream route, yet it doesn’t do much for me. If anything, I’m not satisfied.

Which brings me to the snacks I love—walnuts is one of them. There’s nothing quite like eating a handful of nuts to keep the energy going for the day. Nuts, especially, provide me with the protein I need to keep me focused and energized. I also enjoy the incredible taste. Who said you need salted nuts to satisfy a craving?

The energy lift doesn’t last long though, I suppose because I have a fast metabolism.

Next on the list is cheese. I gorge on cheese, particularly mozzarella. If anything is true, cheese makes Jack a happy boy. I’ll have it in chunks. I’ll spread it on a pita with some salsa sauce and away I go. Great snack. Really. I also love feta. I’ll talk about feta later, but it has such a well-rounded flavor, it’s hard to resists its draw.

Cucumbers are so high on my list of snacks that I’m surprised I haven’t placed it at the top of this post. Whenever I get the munchies, cucumbers deliver on the goods. They’re great on their own or simply with a little salt. Typically, I’ll wash the cucumber, cut it in half and eat it plain. Simple, right? If I’m really feeling adventurous, I’ll dice it, add salt, pepper, lemon, oregano, and feta cheese, sit on the couch and stuff my face while watching reruns of Love It or List It.

Next on my list are avocados. I have my wife to thank for introducing this fruit to our family a few years ago. Easiest way to eat this is to cut it lengthwise, add some lemon and salt and off you go. Great, great snack. Not only does it provide a good source of monounsaturated fat that reduces blood pressure, but also contains carotenoids, which protects against eye disease. I eat it because it’s a great snack.

I eat other snacks, but let’s limit the list to what I have here. Suffice it to say, my fridge and pantry are always full of snacks I like.

I know that real chocolate comes to mind, but we’ll not go there.
